Ingredients
  

Salad
  • 6 cups seedless watermelon cubed
  • 1 cup feta cheese crumbled
  • 1 cucumber thinly sliced
  • 0.25 cup fresh mint leaves
  • 2 tbsp extra virgin olive oil
  • 3 tbsp balsamic glaze
  • 0.25 tsp sea salt
  • 0.25 tsp black pepper freshly cracked
  • 1 tbsp lime juice optional

Method
 

  1. Wash and prepare all fresh ingredients before assembling the salad.
  2. Cube the watermelon into bite-sized pieces and place into a large serving bowl.
  3. Thinly slice the cucumber and add it to the bowl.
  4. Scatter fresh mint leaves evenly throughout the salad.
  5. Top the salad with crumbled feta cheese.
  6. Drizzle olive oil lightly over the ingredients.
  7. Finish with balsamic glaze, sea salt, and freshly cracked black pepper.
  8. Gently toss the salad just before serving and enjoy chilled.

Notes

For best texture and flavor, serve immediately after assembling. Chill the watermelon beforehand for an extra refreshing salad.
