Ingredients
  

Salad
  • 4 cups watermelon cubed
  • 1 cucumber sliced
  • 0.75 cup feta cheese crumbled
  • 0.25 cup fresh mint chopped
Dressing
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 0.25 tsp salt optional
  • 0.25 tsp black pepper

Method
 

  1. Place cubed watermelon in a large mixing bowl.
  2. Add sliced cucumber to the bowl.
  3. Sprinkle feta cheese and chopped mint over the salad.
  4. Whisk olive oil, lime juice, salt, and pepper in a small bowl.
  5. Pour dressing over salad and toss gently.
  6. Chill briefly if desired, then serve fresh.

Notes

Best served fresh. Avoid overmixing to maintain texture.
