Ingredients
  

Salad
  • 6 cups kale chopped, stems removed
  • 1 apple thinly sliced
  • 0.75 cup pomegranate arils
  • 0.5 cup toasted nuts walnuts or pecans
  • 0.33 cup crumbled cheese feta or goat cheese
Vinaigrette
  • 3 tbsp olive oil
  • 1.5 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • salt and black pepper to taste

  • Large mixing bowl
  • Small bowl or jar

Method
 

  1. Place chopped kale in a large bowl and massage with a small amount of olive oil until tender.
  2. Whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper.
  3. Toss the kale with the vinaigrette until evenly coated.
  4. Add apple slices and pomegranate arils and gently toss.
  5. Top with toasted nuts and crumbled cheese.
  6. Serve immediately or refrigerate until ready to serve.

Notes

Massage kale well for best texture and flavor.
