A crunchy, colorful salad with shredded cabbage, beans, corn, cheese, and crispy Fritos tossed in a creamy Southwestern dressing.

Ingredients
  

Salad
  • 5 cups shredded green cabbage or coleslaw mix
  • 1 cup corn drained
  • 1 cup black beans rinsed and drained
  • 1 red bell pepper chopped
  • 1 small red onion finely diced
  • 1 cup shredded cheddar cheese
  • 2 cups Fritos corn chips lightly crushed
  • 2 green onions chopped for garnish
Dressing
  • 0.5 cup mayonnaise
  • 0.5 cup sour cream or Greek yogurt
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • salt and pepper to taste

Equipment

  • Large mixing bowl

Method
 

  1. Shred the cabbage and chop the vegetables.
  2. In a bowl, whisk mayonnaise, sour cream, vinegar, honey, chili powder, cumin, salt, and pepper.
  3. In a large mixing bowl, combine cabbage, beans, corn, red pepper, onion, and cheese.
  4. Pour dressing over salad and toss until evenly coated.
  5. Fold in Fritos right before serving and garnish with green onions.

Notes

Add Fritos just before serving for the best crunch. Great for potlucks and BBQs.
