- Line a baking sheet with parchment paper.
- Mix Greek yogurt, peanut butter, honey, and vanilla extract until smooth.
- Scoop small portions onto the prepared tray.
- Freeze for 2–3 hours until firm.
- Melt chocolate with coconut oil and drizzle over bites.
- Sprinkle with crushed peanuts if desired.
- Freeze again briefly to set chocolate, then serve.
