- Preheat oven to 375°F (190°C). Cut small circles from tortillas.
- Brush tortillas with butter, then coat with Fruity Pebbles, sugar, and cinnamon mixture.
- Hang tortillas over oven rack bars and bake 7–8 minutes until crisp.
- Beat cream cheese, powdered sugar, and vanilla until smooth.
- Whip heavy cream and sugar until stiff peaks form, then fold into cream cheese mixture.
- Pipe cheesecake filling into cooled taco shells.
- Top with whipped cream and Fruity Pebbles before serving.
