Ingredients
  

Taco Shells
  • 6 small flour tortillas
  • 2 tbsp melted butter
  • 1 cup Fruity Pebbles cereal crushed slightly
  • 0.25 cup granulated sugar
  • 0.5 tsp cinnamon optional
Cheesecake Filling
  • 8 oz cream cheese softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 2 tbsp sugar for whipping cream
Toppings
  • whipped cream for garnish
  • extra Fruity Pebbles cereal for topping

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 375°F (190°C). Cut small circles from tortillas.
  2. Brush tortillas with butter, then coat with Fruity Pebbles, sugar, and cinnamon mixture.
  3. Hang tortillas over oven rack bars and bake 7–8 minutes until crisp.
  4. Beat cream cheese, powdered sugar, and vanilla until smooth.
  5. Whip heavy cream and sugar until stiff peaks form, then fold into cream cheese mixture.
  6. Pipe cheesecake filling into cooled taco shells.
  7. Top with whipped cream and Fruity Pebbles before serving.

Notes

Best served immediately after assembly for crisp texture.
