Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 0.75 cup powdered sugar
  • 1 tsp vanilla extract
  • 0.5 tsp salt
  • 2 cups all-purpose flour
  • 0.5 cup rainbow sprinkles
Filling
  • 0.5 cup unsalted butter softened
  • 1.5 cups powdered sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp cream or milk

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Beat butter and powdered sugar until light and fluffy.
  2. Mix in vanilla extract and salt.
  3. Add flour and mix until a soft dough forms. Fold in sprinkles.
  4. Chill dough for 30 minutes.
  5. Roll dough, cut cookies, and place on lined baking sheets.
  6. Bake at 325°F (165°C) for 12–15 minutes. Cool completely.
  7. Beat frosting ingredients until smooth.
  8. Sandwich cookies with frosting and serve.

Notes

Use jimmies for best color retention and chill dough for clean edges.
