- Remove pork chops from the refrigerator 20 minutes before cooking and pat them dry with paper towels.
- Mix salt, pepper, smoked paprika, thyme, and onion powder in a small bowl.
- Rub seasoning mixture evenly over both sides of the pork chops.
- Heat olive oil in a cast iron skillet over medium-high heat.
- Place pork chops in the hot skillet and cook for 4–5 minutes without moving.
- Flip pork chops and cook another 3–4 minutes until golden brown.
- Add butter and minced garlic to the skillet and reduce heat to medium.
- Spoon melted garlic butter over the pork chops while they finish cooking.
- Cook until internal temperature reaches 145°F (63°C).
- Remove from skillet, garnish with parsley and lemon juice, rest 5 minutes, and serve.
Notes
Use thick pork chops for best results and avoid overcooking to maintain juiciness.
