  • 4 chicken breasts
  • 4 cloves garlic minced
  • 3 tbsp olive oil
  • 2 tbsp butter melted
  • 1 tsp rosemary
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 tsp paprika
  • 1 lb baby potatoes halved
  • 2 carrots sliced
  • 1 zucchini chopped
  • 1 lemon sliced

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Mix olive oil, butter, garlic, and herbs.
  3. Arrange chicken and vegetables on a baking sheet.
  4. Drizzle mixture over everything evenly.
  5. Top with lemon slices.
  6. Roast for 30–40 minutes until chicken is cooked through.
  7. Broil briefly for crispiness if desired.
  8. Garnish and serve warm.
