Ingredients
  

Soup Base
  • 2 tbsp olive oil
  • 1 onion chopped
  • 5 cloves garlic minced
  • 1 head broccoli cut into florets
  • 1 potato diced
  • 4 cups vegetable broth
  • 1 cup water
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp oregano
  • 0.25 tsp red pepper flakes optional
  • 0.5 cup Parmesan cheese grated
  • 2 tbsp parsley chopped
  • 1 tbsp lemon juice

Equipment

  • Large pot
  • Knife
  • Cutting board
  • Immersion blender

Method
 

  1. Heat olive oil and sauté onion until soft.
  2. Add garlic and cook until fragrant.
  3. Add broccoli and potato, stir well.
  4. Pour in broth and water, bring to boil then simmer.
  5. Season and cook until vegetables are tender.
  6. Blend soup to desired consistency.
  7. Stir in Parmesan and lemon juice.
  8. Serve hot with garnish.

Notes

Add cream for richer texture or keep vegan by skipping cheese.
