Method
- Season chicken with salt, pepper, paprika, and Italian seasoning.
- Heat butter and olive oil in a large skillet over medium-high heat. Sear chicken until golden, then remove.
- Add garlic to the same pan and cook until fragrant.
- Stir in uncooked rice and toast for 1–2 minutes.
- Pour in chicken broth and cream, stirring to combine.
- Return chicken to the pan, cover, and simmer on low for 18–20 minutes until rice is tender.
- Sprinkle parmesan and mozzarella over the top. Cover until melted.
- Rest 5 minutes, garnish with parsley, and serve warm.
