  • 2 boneless skinless chicken breasts
  • 1 cup long grain white rice uncooked
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic minced
  • 0.5 cup parmesan cheese freshly grated
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
  • salt and black pepper to taste
  • 0.5 cup mozzarella cheese optional
  • 2 tbsp fresh parsley chopped

Equipment

  • Large skillet or deep pan
  • Cutting board

  • Measuring cups and spoons

Method
 

  1. Season chicken with salt, pepper, paprika, and Italian seasoning.
  2. Heat butter and olive oil in a large skillet over medium-high heat. Sear chicken until golden, then remove.
  3. Add garlic to the same pan and cook until fragrant.
  4. Stir in uncooked rice and toast for 1–2 minutes.
  5. Pour in chicken broth and cream, stirring to combine.
  6. Return chicken to the pan, cover, and simmer on low for 18–20 minutes until rice is tender.
  7. Sprinkle parmesan and mozzarella over the top. Cover until melted.
  8. Rest 5 minutes, garnish with parsley, and serve warm.

Notes

Use freshly grated parmesan for best flavor and texture. Add vegetables for extra nutrition.
