Ingredients
  

  • 1 lb mushrooms white button or cremini, cleaned and halved
  • 3 tbsp butter melted
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1/2 cup parmesan cheese freshly grated
  • 1/4 tsp red pepper flakes optional
  • 1 tbsp parsley freshly chopped, for garnish
  • to taste salt and black pepper

Equipment

  • Mixing bowl
  • Grater for parmesan

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine melted butter, olive oil, garlic, salt, pepper, and red pepper flakes. Toss mushrooms until evenly coated.
  3. Spread mushrooms in a single layer on prepared baking sheet. Sprinkle with parmesan.
  4. Roast 15 minutes or until mushrooms are tender and parmesan is golden.
  5. Remove from oven, sprinkle with parsley, and serve warm.

Notes

For extra flavor, add a splash of white wine or balsamic vinegar before roasting. Can also be cooked in a skillet on the stovetop.
