Ingredients
  

Sweet Potatoes
  • 3 sweet potatoes diced
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
Finishing
  • 0.5 cup Parmesan cheese grated
  • 2 tbsp fresh parsley chopped

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Peel and dice sweet potatoes into even cubes.
  3. Toss potatoes with olive oil, garlic, salt, pepper, and paprika.
  4. Spread evenly on a baking sheet, leaving space between pieces.
  5. Roast 25–35 minutes, flipping halfway through, until crispy and golden.
  6. Sprinkle Parmesan over hot potatoes, toss gently, and garnish with parsley.

Notes

For even more crispiness, place potatoes under the broiler for 1–2 minutes at the end.
