Ingredients
  

Soup
  • 2 tbsp butter or olive oil
  • 1 onion diced
  • 6 cloves garlic minced
  • 4 large potatoes peeled and cubed
  • 4 cups broth
  • 1 cup cream or milk
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp thyme
  • 0.25 tsp smoked paprika optional
Garnish
  • 2 tbsp chopped herbs
  • 2 tbsp sour cream optional

Equipment

  • Large pot
  • Immersion blender
  • Knife
  • Cutting board

Method
 

  1. Heat butter or oil in a large pot over medium heat.
  2. Add onion and cook until soft and translucent.
  3. Stir in garlic and cook until fragrant.
  4. Add potatoes and broth, bring to a boil.
  5. Reduce heat and simmer until potatoes are tender.
  6. Blend soup until smooth or desired texture.
  7. Stir in cream and seasonings, simmer briefly.
  8. Serve hot with garnishes.

Notes

For deeper flavor, roast garlic before adding.
