Ingredients
  

Potatoes
  • 2 lbs Yukon Gold potatoes thinly sliced
Sauce
  • 3 tbsp unsalted butter
  • 1 small onion finely diced
  • 4 cloves garlic minced
  • 1 cup broth chicken or vegetable
  • 1.5 cups plain Greek yogurt whole milk recommended
  • 0.5 cup Parmesan cheese shredded
  • 1 cup shredded cheese cheddar, Gruyère, or mozzarella
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 1 tsp thyme optional

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Slice potatoes thinly using a sharp knife or mandoline.
  3. Sauté onion in butter, then add garlic.
  4. Add broth, then remove from heat and stir in yogurt and seasonings.
  5. Layer potatoes and sauce in the baking dish.
  6. Top with cheese and cover with foil.
  7. Bake 45 minutes covered, then 25 minutes uncovered.
  8. Rest 10 minutes before serving.

Notes

Letting the dish rest thickens the sauce naturally.
