- Cook macaroni in salted boiling water until al dente, then drain.
- Season shrimp with paprika, salt, and pepper.
- Heat olive oil in a skillet and cook shrimp about 2 minutes per side until pink.
- Add minced garlic to the shrimp during the last minute of cooking.
- Remove shrimp from the skillet and set aside.
- In a saucepan melt butter, whisk in flour and cook for 1–2 minutes.
- Slowly whisk in milk and cream until smooth and thickened.
- Add cheddar, mozzarella, and parmesan cheese and stir until melted.
- Mix cooked macaroni into the cheese sauce.
- Fold in shrimp and garnish with parsley before serving.
Notes
For extra flavor, add a squeeze of lemon juice or a pinch of Cajun seasoning.
