Ingredients
  

Mofongo
  • 3 green plantains peeled and sliced
  • 2 cups vegetable oil for frying
  • 4 cloves garlic minced
  • 3 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup chicken broth
Garlic Shrimp
  • 1 lb large shrimp peeled and deveined
  • 4 tbsp butter
  • 5 cloves garlic minced
  • 1 tbsp olive oil
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes optional
  • 0.5 lime juiced

Equipment

  • Mixing bowls
  • Large skillet
  • Deep frying pan
  • Mortar and pestle or masher

Method
 

  1. Peel and slice plantains into chunks.
  2. Fry plantains in hot oil until golden and tender, then drain.
  3. Mash garlic, olive oil, salt, and pepper into a paste.
  4. Add fried plantains and mash until chunky, adding broth gradually.
  5. Shape mofongo into mounds and keep warm.
  6. Heat butter and olive oil, sauté garlic until fragrant.
  7. Add shrimp and seasonings, cook until pink and opaque.
  8. Finish with lime juice and serve shrimp over mofongo.

Notes

For extra flavor, drizzle additional garlic butter sauce over the mofongo before serving.
