Method
- Heat oil in a pot. Sauté garlic, ginger, and onion until fragrant.
- Add carrots and celery; cook 3–5 minutes.
- Add chicken, chicken broth, soy sauce, pepper, and salt.
- Simmer 20 minutes or until chicken is cooked.
- Shred chicken and return to pot.
- Add noodles and cook until tender.
- Stir in rice vinegar, lemon juice, and green onions.
- Serve hot with cilantro garnish.
Notes
Add chili flakes for heat. Use bone-in chicken for richer flavor.
