Ingredients
  

Chicken Noodle Soup
  • 1 lb chicken breast or thighs
  • 1 tbsp olive oil
  • 6 cloves garlic minced
  • 2 tbsp fresh ginger minced or grated
  • 1 onion diced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 8 cups chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar optional
  • 6 oz egg noodles
  • 0.5 tsp black pepper
  • 1 tsp salt
  • 1 tbsp lemon juice
  • 0.25 cup green onions chopped
  • cilantro for garnish

Method
 

  1. Heat oil in a pot. Sauté garlic, ginger, and onion until fragrant.
  2. Add carrots and celery; cook 3–5 minutes.
  3. Add chicken, chicken broth, soy sauce, pepper, and salt.
  4. Simmer 20 minutes or until chicken is cooked.
  5. Shred chicken and return to pot.
  6. Add noodles and cook until tender.
  7. Stir in rice vinegar, lemon juice, and green onions.
  8. Serve hot with cilantro garnish.

Notes

Add chili flakes for heat. Use bone-in chicken for richer flavor.
