  • 6 cups crispy rice cereal
  • 4 cups mini marshmallows
  • 3 tbsp unsalted butter
  • 0.25 cup brown sugar
  • 3 tbsp molasses
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.125 tsp cloves
  • 1 tsp vanilla extract
  • 0.5 cup crushed gingersnap cookies optional

Method
 

  1. Line a 9x13-inch pan with parchment paper.
  2. Melt butter in a saucepan over medium-low heat.
  3. Stir in brown sugar and molasses until smooth.
  4. Add marshmallows and stir until completely melted.
  5. Mix in ginger, cinnamon, nutmeg, cloves, vanilla, and salt.
  6. Remove from heat and fold in rice cereal and crushed cookies.
  7. Press mixture gently into prepared pan.
  8. Cool completely and cut into squares.

Notes

Do not press mixture too firmly to keep treats soft and chewy.
