Ingredients
  

Muffin Batter
  • 1.75 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1.5 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp cloves
  • 0.5 tsp ginger
  • 0.5 cup unsalted butter melted
  • 0.75 cup brown sugar
  • 0.25 cup granulated sugar
  • 2 eggs
  • 1 cup pumpkin puree
  • 0.25 cup milk
  • 1 tsp vanilla extract
  • 0.75 cup pecans chopped
Glaze
  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • 0.5 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and prepare muffin tin.
  2. Whisk dry ingredients together in a bowl.
  3. Mix wet ingredients in a separate bowl until smooth.
  4. Combine wet and dry ingredients gently.
  5. Fold in pecans.
  6. Fill muffin cups and top with extra pecans.
  7. Bake for 18–22 minutes.
  8. Cool and drizzle with glaze before serving.

Notes

For extra flavor, toast pecans before adding. Store in airtight container.
