- Preheat oven to 400°F (200°C). Prepare a baking sheet.
- Arrange sweet potato slices on baking sheet and drizzle with olive oil and salt.
- Roast for 25–30 minutes until beginning to soften and caramelize.
- Whisk together melted butter, maple syrup, brown sugar, cinnamon, nutmeg, and vanilla.
- Pour glaze over roasted sweet potatoes and toss to coat evenly.
- Sprinkle pecans on top and return to oven for 15–20 minutes until glossy and caramelized.
- Cool slightly before serving to allow glaze to set.
Notes
For extra shine, brush with additional maple syrup before serving. Best served warm.
