Ingredients
  

Sweet Potatoes
  • 4 large sweet potatoes peeled and sliced
  • 2 tbsp olive oil
  • 1/4 tsp salt
Glistening Glaze
  • 3 tbsp unsalted butter melted
  • 1/3 cup maple syrup
  • 1/3 cup brown sugar packed
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla extract
  • 1 cup pecans chopped

Equipment

Method
 

  1. Preheat oven to 400°F (200°C). Prepare a baking sheet.
  2. Arrange sweet potato slices on baking sheet and drizzle with olive oil and salt.
  3. Roast for 25–30 minutes until beginning to soften and caramelize.
  4. Whisk together melted butter, maple syrup, brown sugar, cinnamon, nutmeg, and vanilla.
  5. Pour glaze over roasted sweet potatoes and toss to coat evenly.
  6. Sprinkle pecans on top and return to oven for 15–20 minutes until glossy and caramelized.
  7. Cool slightly before serving to allow glaze to set.

Notes

For extra shine, brush with additional maple syrup before serving. Best served warm.
