Ingredients
  

Dough
  • 3 cups gluten-free all-purpose flour blend with xanthan gum
  • 2 tbsp psyllium husk powder
  • 2.25 tsp instant yeast one packet
  • 1.5 tsp salt
  • 1 tbsp honey or maple syrup
  • 1 tbsp olive oil
  • 1.75 cups warm water about 110°F

  • Large mixing bowl
  • Wooden spoon
  • Dutch oven
  • Wire rack

Method
 

  1. Whisk flour, psyllium husk powder, yeast, and salt in a large bowl.
  2. Add warm water, honey, and olive oil. Stir until a thick sticky dough forms.
  3. Cover and let rest at room temperature for 2–3 hours until puffed.
  4. Refrigerate dough for at least 8 hours or overnight.
  5. Preheat oven and Dutch oven to 450°F (230°C) for 30 minutes.
  6. Shape dough gently and place into hot Dutch oven. Cover with lid.
  7. Bake covered for 35 minutes, then uncovered for 15 minutes.
  8. Cool completely on wire rack before slicing.

Notes

Do not slice while hot. Psyllium husk powder is essential for structure.
