Pasta Bake
  • 12 oz short pasta
  • 4 cups fresh spinach
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1.5 cups heavy cream
  • 0.5 cup milk
  • 1 cup mozzarella cheese grated
  • 0.5 cup parmesan cheese grated

Method
 

  1. Cook pasta in salted water until al dente. Drain and set aside.
  2. Sauté onion in olive oil and butter until soft. Add garlic and cook briefly.
  3. Stir in cream and milk, warming gently without boiling.
  4. Add cheeses, seasoning, and spinach. Stir until spinach wilts.
  5. Mix pasta with sauce and transfer to baking dish.
  6. Bake at 375°F (190°C) until golden and bubbly.
