- Peel hard-boiled eggs and slice in half lengthwise. Remove yolks and place in a bowl.
- Mash yolks with mayonnaise, Dijon mustard, vinegar, paprika, salt, and pepper until smooth.
- Spoon or pipe filling back into egg white halves.
- Coat each filled egg in flour, dip in beaten egg, then coat with breadcrumbs.
- Heat oil to 350°F (175°C) in a skillet.
- Fry coated eggs in small batches until golden, about 1–2 minutes per side.
- Drain on paper towels and sprinkle with paprika and parsley before serving.
Notes
For extra crunch, use panko breadcrumbs. Best served hot and fresh. You can prep the filling and coating earlier and fry just before serving.
