Ingredients
  

Curry Chicken
  • 3 lbs bone-in chicken pieces
  • 3 tbsp Jamaican curry powder
  • 2 tbsp vegetable oil
  • 1 large onion sliced
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 scallions chopped
  • 2 sprigs fresh thyme
  • 1 Scotch bonnet pepper optional
  • 2 potatoes cubed
  • 1 cup coconut milk
  • 1 cup chicken stock

Equipment

  • Large pot or Dutch oven
  • Cutting board
  • Chef’s knife
  • Wooden spoon

Method
 

  1. Season chicken with spices and curry powder; marinate at least 30 minutes.
  2. Heat oil and bloom curry powder until fragrant.
  3. Add chicken and sear lightly.
  4. Stir in aromatics and cook until fragrant.
  5. Add coconut milk, stock, and potatoes.
  6. Simmer until chicken is tender and sauce thickens.
