- Preheat oven to 175°C (350°F). Line a 9x13 inch baking pan with parchment paper, leaving an overhang for easy removal.
- Combine flour, sugar, baking powder, and salt in a large bowl. Cut in cold cubed butter until mixture resembles coarse crumbs. Reserve 1 cup for the topping.
- Press remaining mixture into the bottom of the prepared pan and bake for 12 minutes until lightly golden.
- In a medium bowl, toss diced peaches with sugar, lemon juice, cornstarch, and cinnamon. Ensure peaches are evenly coated.
- Pour peach mixture over the baked crust and sprinkle reserved crumble mixture on top.
- Bake for 35-40 minutes or until topping is golden and filling is bubbly.
- Cool completely in the pan on a wire rack. Lift out using parchment overhang and cut into bars.
