Ingredients
  

Pinwheel Rolls
  • 2 sheets puff pastry thawed
  • 3 cups yellow onions thinly sliced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 cup blue cheese crumbled
  • 1 tsp fresh thyme chopped
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Heat butter and olive oil in a skillet over medium-low heat. Add onions and salt, cooking slowly until deeply caramelized.
  2. Remove onions from heat and allow to cool completely.
  3. Roll out puff pastry sheets on a floured surface.
  4. Spread caramelized onions evenly over pastry, then sprinkle with blue cheese, thyme, and black pepper.
  5. Roll tightly into logs, chill briefly, then slice into 1-inch rounds.
  6. Arrange on parchment-lined baking sheet and bake at 400°F (200°C) for 18–22 minutes until golden.
