Method
- Heat butter and olive oil in a skillet over medium-low heat. Add onions and salt, cooking slowly until deeply caramelized.
- Remove onions from heat and allow to cool completely.
- Roll out puff pastry sheets on a floured surface.
- Spread caramelized onions evenly over pastry, then sprinkle with blue cheese, thyme, and black pepper.
- Roll tightly into logs, chill briefly, then slice into 1-inch rounds.
- Arrange on parchment-lined baking sheet and bake at 400°F (200°C) for 18–22 minutes until golden.
