Ingredients
  

Potatoes
  • 1.5 kg baby potatoes halved
  • 4 tbsp olive oil
  • 4 cloves garlic minced
  • 2 tbsp fresh thyme
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 150 g feta cheese crumbled

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 220°C (425°F).
  2. Toss potatoes with olive oil, garlic, thyme, salt, and pepper.
  3. Spread on baking sheet in a single layer.
  4. Roast for 35–40 minutes, flipping halfway.
  5. Remove and sprinkle with feta cheese.
  6. Serve immediately while hot.

Notes

For extra crispiness, avoid overcrowding the pan and roast at high heat.
