- Preheat oven to 220°C (425°F).
- Toss potatoes with olive oil, garlic, thyme, salt, and pepper.
- Spread on baking sheet in a single layer.
- Roast for 35–40 minutes, flipping halfway.

- Serve immediately while hot.
Notes
