Ingredients
  

Sandwich
  • 2 pieces focaccia bread halved
  • 6-8 slices bacon cooked crispy
  • 1 cup arugula fresh
  • 1 tomato sliced
  • 3 tbsp garlic aioli
  • 2 tbsp olive oil
  • 1 tsp Dijon mustard optional
  • salt to taste
  • black pepper to taste

  • Hand mixer or stand mixer

Method
 

  1. Cook bacon in a skillet until crispy, then drain on paper towels.
  2. Slice focaccia and drizzle with olive oil.
  3. Toast the bread lightly until crisp on the edges.
  4. Mix garlic aioli with Dijon mustard if desired.
  5. Spread sauce on both halves of the bread.
  6. Layer bacon, tomato slices, and arugula.
  7. Season with salt and pepper.
  8. Close sandwich, slice, and serve immediately.

Notes

For extra flavor, add cheese or avocado. Best served fresh.
