- Butter the outside of each bread slice.
- Spread pesto on the inside of each bread slice.
- Layer mozzarella and optional tomato slices onto two slices of bread.
- Close sandwiches with remaining bread slices, buttered side facing out.
- Heat a skillet over medium-low heat.
- Grill sandwiches 3–5 minutes per side until golden and melty.
- Serve immediately for best texture and flavor.
Notes
For extra crispiness, cook slowly and press gently with a spatula.
