Ingredients
  

Grilled Cheese
  • 4 slices sourdough bread
  • 4 oz fresh mozzarella sliced
  • 3 tbsp basil pesto
  • 2 tbsp butter softened
  • 1 tomato optional, sliced
  • 1 pinch red pepper flakes optional

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Butter the outside of each bread slice.
  2. Spread pesto on the inside of each bread slice.
  3. Layer mozzarella and optional tomato slices onto two slices of bread.
  4. Close sandwiches with remaining bread slices, buttered side facing out.
  5. Heat a skillet over medium-low heat.
  6. Grill sandwiches 3–5 minutes per side until golden and melty.
  7. Serve immediately for best texture and flavor.

Notes

For extra crispiness, cook slowly and press gently with a spatula.
