Ingredients
  

Potatoes
  • 2 lbs baby potatoes halved
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp thyme
  • 1 tsp rosemary
  • 0.5 cup parmesan cheese grated
  • 2 tbsp parsley chopped
  • 1 tbsp lemon juice

Equipment

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Toss potatoes with oil, garlic, and seasonings.
  3. Spread on baking sheet and roast 30–35 minutes.
  4. Transfer to bowl and toss with parmesan and herbs.
  5. Serve warm or at room temperature.

Notes

For extra crispiness, avoid overcrowding the pan and roast at high heat.
