- Preheat oven to 425°F (220°C).
- Toss potatoes with oil, garlic, and seasonings.
- Spread on baking sheet and roast 30–35 minutes.
- Transfer to bowl and toss with parmesan and herbs.
- Serve warm or at room temperature.
Notes
For extra crispiness, avoid overcrowding the pan and roast at high heat.
