Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 0.5 cup unsalted butter melted
  • 2 tbsp sugar
Filling
  • 3 packages cream cheese softened
  • 1 cup sugar
  • 1 cup white chocolate melted
  • 3 eggs
  • 1 tsp vanilla extract
  • 0.5 cup heavy cream
Strawberry Topping
  • 2 cups strawberries sliced
  • 0.25 cup sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch
White Chocolate Drip
  • 0.75 cup white chocolate chips
  • 0.25 cup heavy cream

Equipment

  • Mixing bowls
  • Springform pan
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 325°F (160°C). Prepare crust and bake for 10 minutes.
  2. Beat cream cheese and sugar until smooth. Add melted white chocolate.
  3. Add eggs one at a time, then vanilla and cream.
  4. Pour over crust and bake in water bath for 60 minutes.
  5. Cool gradually, then chill for at least 4 hours.
  6. Prepare strawberry topping and let cool.
  7. Make white chocolate drip and assemble cheesecake.

Notes

For best results, chill overnight and use fresh ripe strawberries.
