Ingredients
  

Chicken Marinade
  • 1.5 lb boneless skinless chicken
  • 0.25 cup olive oil
  • 3 tbsp lemon juice fresh
  • 1 tbsp lemon zest
  • 3 cloves garlic minced
  • 2 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
Bowls & Toppings
  • 2 cups cooked rice
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 0.5 cup feta cheese crumbled
  • 0.25 cup kalamata olives sliced
  • 0.5 cup tzatziki sauce

Equipment

  • Mixing bowls
  • Skillet or grill pan
  • Cutting board
  • Knife

Method
 

  1. Whisk marinade ingredients together and coat chicken. Marinate at least 30 minutes.
  2. Cook rice according to package instructions and set aside.
  3. Grill or pan-sear chicken 5–7 minutes per side until fully cooked.
  4. Rest chicken 5 minutes, then slice.
  5. Assemble bowls with rice, chicken, toppings, and tzatziki sauce.

Notes

Marinate chicken overnight for deeper flavor and use fresh herbs for best results.
