Method
- Preheat oven to 375°F (190°C). Grease casserole dish with olive oil.
- Season chicken with salt, pepper, paprika, and half of oregano. Sear in skillet until golden.
- Layer chicken, onions, tomatoes, and olives in dish. Drizzle with lemon juice and sprinkle with oregano.
- Cover with foil, bake 25 minutes. Remove foil, top with feta, bake 10–15 more minutes.
- Garnish with parsley, serve hot with rice, potatoes, or pita.
Notes
Store leftovers in fridge up to 4 days, or freeze up to 2 months. Reheat at 325°F until warm.
