Ingredients
  

Main Ingredients
  • 2 lbs chicken breasts cut into chunks
  • 2 tbsp olive oil extra-virgin
  • 1 red onion thinly sliced
  • 3 cloves garlic minced
  • 1 pint cherry tomatoes halved
  • 1 cup Kalamata olives pitted
  • 1/2 cup feta cheese crumbled
  • 1 lemon juiced
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • salt & black pepper to taste
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Preheat oven to 375°F (190°C). Grease casserole dish with olive oil.
  2. Season chicken with salt, pepper, paprika, and half of oregano. Sear in skillet until golden.
  3. Layer chicken, onions, tomatoes, and olives in dish. Drizzle with lemon juice and sprinkle with oregano.
  4. Cover with foil, bake 25 minutes. Remove foil, top with feta, bake 10–15 more minutes.
  5. Garnish with parsley, serve hot with rice, potatoes, or pita.

Notes

Store leftovers in fridge up to 4 days, or freeze up to 2 months. Reheat at 325°F until warm.
