Greek Chicken with Lemon and Feta

Ingredients
  

Chicken Marinade
  • 2 lbs chicken thighs bone-in or boneless
  • 3 tbsp olive oil
  • 2 lemons juiced
  • 1 lemon zest from one lemon
  • 5 cloves garlic minced
  • 1 tsp oregano dried
  • 1 tsp thyme dried
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
For Baking
  • 1 red onion sliced
  • 1 cup cherry tomatoes
  • 0.5 cup Kalamata olives
  • 1 lemon sliced
  • 0.5 cup feta cheese crumbled
  • 2 tbsp fresh parsley chopped

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Whisk olive oil, lemon juice, lemon zest, garlic, oregano, thyme, paprika, salt, and pepper together in a large bowl.
  3. Add chicken thighs and coat evenly with marinade. Marinate for at least 30 minutes.
  4. Arrange sliced onions, cherry tomatoes, and olives in a baking dish.
  5. Place marinated chicken over vegetables and pour remaining marinade on top.
  6. Add lemon slices around the chicken.
  7. Bake uncovered for 35–45 minutes until chicken is fully cooked and golden.
  8. Sprinkle feta cheese over the chicken and bake 5 more minutes.
  9. Garnish with parsley and serve warm.

Notes

Serve with rice, couscous, roasted potatoes, or warm pita bread for a complete Mediterranean-inspired meal.
