Ingredients
  

Meatballs
  • 1 lb ground beef lean
  • 1/4 cup breadcrumbs
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
Tzatziki Sauce
  • 1 cup plain Greek yogurt
  • 1/2 cucumber small cucumber grated and drained
  • 1 tbsp lemon juice fresh
  • 1 clove garlic minced
Bowl Assembly
  • 2 cups cooked rice white or brown
  • 1 cup chopped cucumber fresh
  • 1 cup chopped tomatoes fresh

Method
 

  1. Preheat a large skillet over medium heat. Mix ground beef, breadcrumbs, egg, garlic, oregano, and salt in a bowl.
  2. Form mixture into meatballs and cook in skillet for 10-12 minutes until browned and cooked through.
  3. For tzatziki, combine Greek yogurt, grated cucumber, lemon juice, and minced garlic. Stir well.
  4. Assemble bowls with cooked rice, meatballs, chopped cucumber, tomatoes, and a generous dollop of tzatziki sauce.
