Ingredients
  

  • 1 lb pizza dough room temperature
  • 2 garlic bulbs
  • 3 tbsp olive oil divided
  • 4 cups fresh spinach
  • 0.75 cup ricotta cheese whole milk
  • 1 cup mozzarella cheese shredded
  • 0.5 cup feta cheese crumbled
  • 1 tsp dried oregano
  • 1 tsp lemon zest
  • salt and black pepper to taste

Method
 

  1. Preheat oven to 425°F (220°C). Roast garlic until soft and golden.
  2. Wilt spinach lightly in olive oil and remove excess moisture.
  3. Mix ricotta with lemon zest, seasoning, and roasted garlic.
  4. Stretch dough and spread ricotta mixture evenly.
  5. Top with spinach, mozzarella, roasted garlic, and feta.
  6. Bake until crust is golden and cheese is bubbly.

Notes

Drain spinach well to avoid soggy crust.
