Ingredients
  

  • 8 lamb chops 1 inch thick
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tbsp fresh rosemary chopped
  • 1 tsp fresh thyme
  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp sea salt
  • 0.5 tsp black pepper freshly ground
  • 0.25 tsp chili flakes optional

Method
 

  1. Whisk together olive oil, garlic, rosemary, thyme, lemon zest, lemon juice, salt, and pepper to make marinade.
  2. Coat lamb chops in the marinade, cover, and refrigerate for 30 minutes to 4 hours.
  3. Preheat grill to medium-high heat (400°F / 200°C).
  4. Grill lamb chops for 3–4 minutes per side, until charred and cooked to desired doneness.
  5. Rest 5 minutes before serving. Garnish with rosemary and lemon wedges.

Notes

For medium-rare lamb, aim for 135°F internal temperature. Add wood chips for a smoky twist.
