Method
- Whisk together olive oil, garlic, rosemary, thyme, lemon zest, lemon juice, salt, and pepper to make marinade.
- Coat lamb chops in the marinade, cover, and refrigerate for 30 minutes to 4 hours.
- Preheat grill to medium-high heat (400°F / 200°C).
- Grill lamb chops for 3–4 minutes per side, until charred and cooked to desired doneness.
- Rest 5 minutes before serving. Garnish with rosemary and lemon wedges.
Notes
For medium-rare lamb, aim for 135°F internal temperature. Add wood chips for a smoky twist.
