  • 1 lb ground beef lean preferred
  • 2 sweet potatoes peeled and cubed
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 0.5 tsp smoked paprika
  • 0.5 tsp chili powder optional
  • 1 cup cottage cheese
  • 1 tbsp fresh parsley chopped, for garnish
  • 0.5 tsp ground cumin optional
  • salt and pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, salt, pepper, and paprika. Roast 20 minutes until tender.
  2. In a skillet over medium heat, cook ground beef 6–8 minutes until browned.
  3. Add garlic, cumin, and chili powder. Stir and cook 2 more minutes.
  4. Assemble bowls with roasted sweet potatoes, ground beef, and cottage cheese.
  5. Garnish with chopped parsley and a pinch of paprika before serving.
