- Preheat oven to 375°F (190°C).
- Slice zucchini in half lengthwise and scoop out the centers to form boats.
- Heat olive oil in a skillet and cook diced onion until soft.
- Add garlic and cook until fragrant.
- Add ground beef and cook until browned.
- Stir in chopped zucchini flesh, tomato sauce, and seasonings.
- Fill zucchini boats with the beef mixture.
- Top with mozzarella and parmesan cheese.
- Bake 20–25 minutes until zucchini is tender and cheese is melted.
Notes
Add mushrooms, bell peppers, or spinach to the filling for extra vegetables.
