Ingredients
  

Zucchini Boats
  • 4 zucchini halved lengthwise
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 cup marinara sauce
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 1 cup mozzarella cheese shredded
  • 0.25 cup parmesan cheese grated
  • 2 tbsp parsley chopped for garnish

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Slice zucchini in half lengthwise and scoop out the centers to form boats.
  3. Heat olive oil in a skillet and cook diced onion until soft.
  4. Add garlic and cook until fragrant.
  5. Add ground beef and cook until browned.
  6. Stir in chopped zucchini flesh, tomato sauce, and seasonings.
  7. Fill zucchini boats with the beef mixture.
  8. Top with mozzarella and parmesan cheese.
  9. Bake 20–25 minutes until zucchini is tender and cheese is melted.

Notes

Add mushrooms, bell peppers, or spinach to the filling for extra vegetables.
