Ingredients
  

Egg Mixture
  • 6 large eggs
  • 2 tbsp carrots finely diced
  • 2 tbsp green onions finely chopped
  • 2 tbsp red bell pepper finely diced
  • 1 tbsp onion minced
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper
  • 1 tsp sesame oil
  • 1 tbsp neutral cooking oil

Method
 

  1. Whisk eggs thoroughly until smooth and fully combined.
  2. Mix in carrots, green onions, bell peppers, onion, salt, pepper, and sesame oil.
  3. Heat a lightly oiled nonstick skillet over low to medium-low heat.
  4. Pour a thin layer of egg mixture into the skillet and spread evenly.
  5. Cook until mostly set, then gently roll the egg toward the center using a spatula.
  6. Push the roll back to the edge of the skillet.
  7. Add another thin layer of egg mixture, lifting the roll slightly so the egg flows underneath.
  8. Continue rolling and repeating until all egg mixture is used.
  9. Transfer to a cutting board, cool slightly, and slice into rounds before serving.

Notes

Cook slowly over gentle heat for the softest texture and cleanest rolls.
