  • 8 eggs large
  • 0.5 cup milk
  • 1 cup cooked ham diced
  • 1 cup cheddar cheese shredded
  • 0.25 cup bell peppers diced optional
  • 0.25 cup green onions chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp garlic powder
  • 0.25 tsp onion powder

Method
 

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. Whisk eggs and milk until smooth and slightly frothy.
  3. Add seasonings, ham, cheese, and vegetables. Mix well.
  4. Pour mixture into muffin cups, filling about ¾ full.
  5. Bake 18–22 minutes until set and lightly golden.
  6. Cool slightly, remove from pan, and serve.

Notes

Store in refrigerator up to 4 days or freeze up to 2 months.
