Ingredients
  

Potatoes
  • 6 russet potatoes medium size
  • 4 tbsp unsalted butter melted
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 0.5 cup parmesan cheese grated
  • 2 tbsp fresh parsley chopped
  • 0.5 cup sour cream optional for serving

Method
 

  1. Preheat oven to 425°F (220°C). Grease a baking sheet or baking dish.
  2. Wash and dry the potatoes thoroughly.
  3. Place each potato between wooden spoons or chopsticks and carefully slice thin cuts across the top without cutting all the way through.
  4. Mix melted butter, olive oil, garlic, salt, pepper, paprika, and thyme in a small bowl.
  5. Brush potatoes generously with the garlic butter mixture, making sure it seeps between the slices.
  6. Bake for 45 minutes, brushing with additional butter mixture every 15 minutes.
  7. Sprinkle parmesan cheese over the potatoes and continue baking for another 15–20 minutes until crispy and golden.
  8. Garnish with parsley and serve hot with sour cream if desired.

Notes

For extra crispy potatoes, bake uncovered and use russet potatoes. Add bacon bits or cheddar cheese for delicious variations.
