Ingredients
  

  • 8 oz elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup milk whole or 2%
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup roasted Hatch green chiles chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Preheat oven to 375°F (190°C). Cook macaroni according to package directions, drain, and set aside.
  2. In a saucepan, melt butter over medium heat. Whisk in flour and cook 1-2 minutes until lightly golden.
  3. Slowly add milk, whisking constantly until sauce thickens, about 5 minutes.
  4. Stir in cheddar, Monterey Jack, salt, and pepper until melted and smooth. Fold in chopped Hatch chiles.
  5. Combine cheese sauce with cooked macaroni. Transfer to a greased baking dish and bake 15 minutes until bubbly and golden on top.
  6. Serve hot, garnished with extra cheese or green chiles if desired.

Notes
