Ingredients
  

Soup Base
  • 3 garlic bulbs tops sliced off
  • 3 lemons 2 juiced, 1 sliced
  • 1 yellow onion diced
  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • 0.5 cup coconut milk full-fat
  • 1 tsp thyme
  • 0.5 tsp sea salt to taste
  • 0.25 tsp black pepper

Equipment

  • Baking sheet
  • Large pot
  • Blender or immersion blender
  • Knife and cutting board

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Slice tops off garlic bulbs, drizzle with olive oil, wrap in foil, and place on baking sheet with lemon slices.
  3. Roast 30–35 minutes until garlic is soft and caramelized.
  4. Sauté diced onion in olive oil until translucent.
  5. Squeeze roasted garlic into pot and stir with onions.
  6. Add broth and thyme. Simmer 10–15 minutes.
  7. Blend soup until smooth.
  8. Stir in lemon juice and coconut milk. Season and serve warm.

Notes

Adjust lemon juice gradually for balanced flavor. For extra creaminess, add more coconut milk.
