- Preheat oven to 400°F (200°C).
- Slice tops off garlic bulbs, drizzle with olive oil, wrap in foil, and place on baking sheet with lemon slices.
- Roast 30–35 minutes until garlic is soft and caramelized.
- Sauté diced onion in olive oil until translucent.
- Squeeze roasted garlic into pot and stir with onions.
- Add broth and thyme. Simmer 10–15 minutes.
- Blend soup until smooth.
- Stir in lemon juice and coconut milk. Season and serve warm.
Notes
Adjust lemon juice gradually for balanced flavor. For extra creaminess, add more coconut milk.
