  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup milk dairy or plant-based
  • 2 eggs large
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup chopped apples peeled or unpeeled
  • 1/4 cup walnuts or pecans optional

Method
 

  1. Preheat oven to 350°F (175°C) and line muffin tin.
  2. Mix dry ingredients: oats, baking powder, cinnamon, salt.
  3. Whisk wet ingredients: milk, eggs, maple syrup, vanilla extract.
  4. Combine wet and dry ingredients, fold in apples and nuts.
  5. Spoon into muffin tin, bake 25–30 minutes until golden and set.
  6. Cool slightly before serving.
