Ingredients
  

Pancake Batter
  • 2 ripe bananas large
  • 2 eggs large
  • 1 cup rolled oats
  • 0.25 cup almond milk unsweetened
  • 1 tsp baking powder
  • 0.5 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup optional

Method
 

  1. Blend oats into fine flour.
  2. Add remaining ingredients and blend until smooth.
  3. Let batter rest for 3–5 minutes.
  4. Cook pancakes on greased skillet 2–3 minutes per side.

Notes

Use very ripe bananas for best sweetness and texture. Store leftovers in refrigerator up to 4 days or freeze up to 2 months.
