Bread Batter
  • 1.5 cups whole wheat flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 2 ripe bananas mashed
  • 2 eggs
  • 0.5 cup Greek yogurt
  • 0.33 cup honey or maple syrup
  • 0.25 cup coconut oil melted
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries diced

Method
 

  1. Preheat oven to 350°F (175°C). Prepare a loaf pan with parchment paper.
  2. Whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. Mix mashed bananas, eggs, yogurt, honey, oil, and vanilla until smooth.
  4. Combine wet and dry ingredients until just mixed.
  5. Fold in strawberries gently.
  6. Pour batter into pan and bake 45–55 minutes.
  7. Cool before slicing and serving.

Notes

Use very ripe bananas for best sweetness and flavor.
