Method
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix oats, almond flour, baking soda, cinnamon, and salt.
- In another bowl, whisk mashed bananas, honey, eggs, vanilla, and coconut oil.
- Combine wet and dry ingredients until a thick dough forms.
- Fold in chocolate chips if using.
- Scoop dough onto baking sheet and gently flatten.
- Bake 12–15 minutes until edges are set but centers are soft.
- Cool on wire rack before serving or storing.
Notes
Do not overbake for best chewy texture. Cookies firm up as they cool.
