Method
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mash bananas in a mixing bowl until smooth.
- Stir in oats, cinnamon, and vanilla.
- Fold in optional add-ins such as chocolate chips, nuts, or seeds.
- Scoop dough onto baking sheet and flatten lightly.
- Bake for 12–15 minutes until set and lightly golden.
- Cool completely before serving.
Notes
Use very ripe bananas for maximum sweetness. Cookies stay soft and chewy.
